Bean & Cheese Enchiladas

Ingredients: Directions:
  1. Mix the beans, 1/2 of the cheeses, the sour cream and the cumin together in a bowl.
  2. Warm tortillas in the microwave to soften them.
  3. Place a portion of the filling in the center of a tortilla.
  4. Roll up tucking under the ends.
  5. In a 13x9 dish place half the enchilada sauce.
  6. Place enchiladas on top of the sauce.
  7. Repeat with the remaining tortillas.
  8. Pour remaining sauce over the top of the enchiladas.
  9. Sprinkle the remaining cheddar and Monterey jack cheese on top of the enchiladas.
  10. Bake at 350 degrees for 20 minutes.
  11. Serve with additional sour cream, guacamole, or salsa if desired.
Notes:These are delicious, and very economical. :) Enjoy!
