Breakfast Burrito
Ingredients:
- 12 eggs, beaten
- 1 pound sausage, cooked and crumbled
- 1/2 cup chunky salsa
- 8 ounces cheddar cheese, shredded
- 24 flour tortillas
Directions:
- Break eggs into microwave safe dish and beat well with fork.
- Cook on high for about 8 minutes until done.
- Stir in cooked sausage, cheese and salsa.
- Warm tortillas in package about 1 1/2 minutes.
- Place 1/2 cup on tortilla and roll burrito style.
- Place on cookie sheet and flash freeze.
- When frozen, wrap individually and store in freezer.
- To reheat, place in microwave for 1 to 2 minutes and enjoy.
Notes:
The first time I made these, I used 1/2 cup per tortilla and only ended up with 16 burritos even though the recipe says it will make 24. The next time I make these, I am going to use a little less, since they fold better with less filling.
