Breakfast Burrito


Ingredients: Directions:
  1. Break eggs into microwave safe dish and beat well with fork.
  2. Cook on high for about 8 minutes until done.
  3. Stir in cooked sausage, cheese and salsa.
  4. Warm tortillas in package about 1 1/2 minutes.
  5. Place 1/2 cup on tortilla and roll burrito style.
  6. Place on cookie sheet and flash freeze.
  7. When frozen, wrap individually and store in freezer.
  8. To reheat, place in microwave for 1 to 2 minutes and enjoy.
Notes: The first time I made these, I used 1/2 cup per tortilla and only ended up with 16 burritos even though the recipe says it will make 24. The next time I make these, I am going to use a little less, since they fold better with less filling.
