My family and I just love the taste of Mexican Food and this recipe is no exception to the rule. My friend Monica and her family are pizza lovers and in my home you will find Taco Lovers. We eat Tacos every Saturday night in our home and sometimes even through the week. I love to experiment with new recipes and enjoy cooking about as much as I enjoy eating. Needless to say, I have done a lot of experimenting in the kitchen with Mexican dishes and this one has become a family favorite.

Do you love cheese? Then you will probably enjoy this recipe. I have tried a variety of Enchilada recipes and have been disappointed in a few of them. The biggest disappointment has been in the taste, I am a big cheese lover and this recipe includes cheese in the meat mixture which gives the enchilada's great flavor in my book. This recipe costs about $4.84 to prepare and will serve 6 people making each serving around .80¢. Here is the recipe just for you:

Enchiladas


Ingredients:
  • 1 pound ground beef ($1.20)
  • 1 pack flour tortillas 10 count (.40¢)
  • 1 large jar salsa ($1.50)
  • 2 cups shredded cheddar cheese ($1.50)
  • 2 teaspoons chili powder (.08¢)
  • 2 teaspoons garlic salt (.08¢)
  • 1/2 teaspoon red pepper flakes (.08¢)
  • 1/4 cup water(free)

Directions:
  1. In a large skillet brown ground beef, drain well.
  2. Add spices and water, boil for about 5 min until water is almost completely absorbed.
  3. Add 1/2 jar salsa and 1 cup cheese to beef, mix well.
  4. Fill each tortilla with 2 Tablespoons of the meat mixture rolling as you go.
  5. Place filled tortillas seam side down in a 9x13 glass baking pan.
  6. Top enchiladas with remaining salsa and cheese.
  7. Bake uncovered at 350 for 20-25 min.
Total Cost to Prepare: $4.84
