Mexican Rice


Ingredients:
  • 1 1/2 cups rice
  • 1/4 cup onion, chopped
  • 1 clove garlic, chopped
  • 2 Tablespoons cooking oil
  • 1 teaspoon salt
  • 1 - 8 ounce can chicken broth
  • 1 cup Pace picante sauce
  • 1/2 cup water
Directions:
  1. Heat oil until hot.
  2. Add all of the rice and stir continuously until golden brown, about 15 minutes.
  3. When rice is brown, stir in onion and garlic.
  4. Turn off the heat and let rest for 5 minutes.
  5. Add the broth, picante sauce, salt and water.
  6. Stir a couple of times and let come to a full boil.
  7. After it comes to a boil, turn the heat down to a simmer.
  8. Cover with lid and allow to simmer for 15 to 20 minutes.
  9. Turn the heat off and let sit for 5 minutes.
  10. Rice will be nice and fluffy
Notes: I have made this dish so many times, I do not need to follow the recipe to make it. It is a wonderful dish, one that my family really enjoys. Do not skip browning the rice, it makes the dish so much better. I have substituted any kind of salsa for the picante sauce. Pace is better, but any kind will do in a pinch. Enjoy!
