Potato Soup
Ingredients:
- 6 large potatoes, peeled and cubed
- 1 large onion, chopped
- 3 stalks celery, diced
- 4 carrots, diced
- 2 cloves of garlic, crushed
- 1 - 8 ounce package cream cheese
Directions:
- Saute' onion, celery and garlic in skillet until transparent.
- Add potatoes and carrots and enough water to cover.
- Bring to a boil then reduce heat & simmer until potates are tender.
- Drain potatoes and reserve liquid.
- Return liquid to pan and whisk in cream cheese
- Return potatoes to mixture and heat through.
- Enjoy!
