While Spending Less ~ WEEK 3. If you like Tex-Mex, Chili or Mexican, you will like this. My family really enjoys this dish. It is easy to make and easy on the wallet. I listed the cost of each ingredient next to it. The recipe says it serves 4 but they would have to be very hungry so I think it would serve about 6, or maybe 4 and then leftovers for someone for lunch the next day! : ) The total recipe cost me $2.36 to prepare, making it around .40¢ per serving.

Ingredients:
1/2 pound ground beef (.60¢)
1/2 cup chopped onion (.10¢)
2 - 16 ounce cans stewed tomatoes (I used diced) (.78¢)
1 - 8 ounce can tomato sauce (.20¢)
4 medium potatoes, sliced thin (.20¢)
1/2 cup rice (.10¢)
1 - 15 ounce can kidney beans (.25¢)
1 Tablespoon Chili Powder (.13¢)
Directions:
Preheat oven to 350 degrees.
Brown ground beef and onions in a skillet and then drain.
Stir in all other ingredients and place in a casserole dish.
Cover and bake at 350 degrees for 1 to 1 1/2 hours until potatoes are done.
