Tacos
Ingredients:
- 2 pounds ground beef
- 15 to 20 corn tortillas
- 1 onion, chopped
- 1 tomato, chopped
- lettuce, chopped
- 8 ounces cheddar cheese, shredded
- 1 can potatos, diced, optional
- Vegetable Oil
Directions:
- Brown ground beef in skillet, breaking up the lumps.
- Salt and Pepper the ground beef.
- After it is browned, add 1 cup of water and let it simmer until most of the water is gone.
- Add the potatoes to the ground beef.
- Lower the heat on the ground beef just to keep it warm.
- In a separate skillet, pour about 1/2 cup of vegetable oil in skillet and heat well.
- Using tongs, place one tortilla in the hot oil and fry for just a minute, on both sides, fold tortilla in half and then stand up on napkins to drain. Fry all of the tortillas this way.
- Using paper towels, dry each tortilla in the cup of your hand, and then fill with 1 to 2 Tablespoons of the ground beef.
- Add toppings as desired.
Notes:
Potatos are optional in this recipe. Sometimes I use them and sometimes I don't. They can be a good filler. I usually make about 5 tacos for everyone and there are 4 of us, although my daughter can only eat about 2, sometimes appetites vary. The perfect taco to me is a tortilla with ground beef, cheese and lettuce, that's all you need. But, I include the onions and tomatos for those who enjoy them. Enjoy! : )
