Mix the dry ingredients above together in a large pan.
Mix the wet ingredients together and add to the dry ingredients.
Mix throughly.
Put into large shallow pans.
Bake at 225 degrees until golden brown and crisp, about 2 to 2 & 1/2 hours.
Can also bake slowly at 170 degrees for 6 to 7 hours.
Serve with fruit if desired. Fresh peaches, strawberries, or fruit puree are especially delicious. Also good with yogurt.
Notes:This recipe comes from The Vine Restaurant which is located in the small town of Benton, Tennessee. The Vine is a vegetarian restaurant, and I had the pleasure of taking a cooking class there during the winter of 2002. I must say that there is something very satisfying about making my own granola. I plan on using this recipe to make Granola Bars for school lunches this fall when my daughter starts Kindergarten. :)
