Granola
Ingredients:
- 7 cups oatmeal
- 1 cup coconut
- 1 cup slivered almonds or chopped pecans
- 1/4 cup to 1/2 cup honey
- 1 cup wheat germ
- 1 & 1/2 teaspoons salt
- 1/4 cup to 1/2 cup oil
- 1/2 cup warm water
- 1 teaspoon vanilla
Directions:
- Preheat oven to 200 degrees.
- Mix the dry ingredients above together in a large pan.
- Mix the wet ingredients together and add to the dry ingredients.
- Mix throughly.
- Put into large shallow pans.
- Bake at 225 degrees until golden brown and crisp, about 2 to 2 & 1/2 hours.
- Can also bake slowly at 170 degrees for 6 to 7 hours.
- Serve with fruit if desired. Fresh peaches, strawberries, or fruit puree are especially delicious. Also good with yogurt.
Notes:This recipe comes from The Vine Restaurant which is located in the small town of Benton, Tennessee. The Vine is a vegetarian restaurant, and I had the pleasure of taking a cooking class there during the winter of 2002. I must say that there is something very satisfying about making my own granola. I plan on using this recipe to make Granola Bars for school lunches this fall when my daughter starts Kindergarten. :)
