Granola

Ingredients: Directions:
  1. Preheat oven to 200 degrees.
  2. Mix the dry ingredients above together in a large pan.
  3. Mix the wet ingredients together and add to the dry ingredients.
  4. Mix throughly.
  5. Put into large shallow pans.
  6. Bake at 225 degrees until golden brown and crisp, about 2 to 2 & 1/2 hours.
  7. Can also bake slowly at 170 degrees for 6 to 7 hours.
  8. Serve with fruit if desired. Fresh peaches, strawberries, or fruit puree are especially delicious. Also good with yogurt.
Notes:This recipe comes from The Vine Restaurant which is located in the small town of Benton, Tennessee. The Vine is a vegetarian restaurant, and I had the pleasure of taking a cooking class there during the winter of 2002. I must say that there is something very satisfying about making my own granola. I plan on using this recipe to make Granola Bars for school lunches this fall when my daughter starts Kindergarten. :)
