Squash Casserole


Ingredients:
Directions:
  1. Cook squash and drain.
  2. Mash with a fork.
  3. Stir in the eggs and cheese.
  4. Add enough of the saltines to absorb the liquid.
  5. Bake at 325 degrees for 45 minutes.


Notes:This recipes comes from the Misery Moms book by Jonni McCoy. This is a very simple recipe found in many country cookbooks. I remember eating something similar to this dish in a local restaurant in Dunlap, Tennessee. My former husband & I used to get together every Thursday to eat there during his dinner break. :)
