Squash Casserole
Ingredients:
- 6 to 8 small squash, thinly sliced
- 2 eggs
- 1 package saltine crackers, crushed
- Salt and pepper to taste
- 1/4 cup grated cheddar cheese
Directions:
- Cook squash and drain.
- Mash with a fork.
- Stir in the eggs and cheese.
- Add enough of the saltines to absorb the liquid.
- Bake at 325 degrees for 45 minutes.
Notes:This recipes comes from the Misery Moms book by Jonni McCoy. This is a very simple recipe found in many country cookbooks. I remember eating something similar to this dish in a local restaurant in Dunlap, Tennessee. My former husband & I used to get together every Thursday to eat there during his dinner break. :)
